Sarah Elliott grew up baking up to 18 dozen butter tarts each day at the famous Henry’s Fish Restaurant alongside her parents. Sarah eventually went on to work in Barrie but, being a true Georgian Bay girl at heart, she returned to North Simcoe to start the Sans Souci Tart Co., using the original recipe passed down through generations.

Sarah has seen her side-business explode through the strong connections, support and mentorship of the local business community. No matter the season, Sarah loves that there is always something to see and do. Visit Sarah at Canada’s largest and Ontario’s Best Butter Tart festival, June 13, 2020.
